½ cup boiled black beans, well drained

1 cup vital wheat gluten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

3 tablespoons nutritional yeast

2–3 tablespoons oil

Water or vegetable broth, as needed
Instructions

Mash beans
Mash chickpeas and black beans until mostly smooth with some texture remaining. -
Season
Add garlic powder, onion powder, paprika, and nutritional yeast. Mix well. -
Add gluten
Stir in vital wheat gluten. Add oil and small amounts of water or broth until a firm dough forms. -
Knead briefly
Knead for 2–3 minutes to develop structure. Do not over-knead. -
Shape
Form into logs, cutlets, cubes, or patties. -
Cook
Steam for 30 minutes for a firm texture. Cool before slicing or pan-frying if desired.
